I know, there are 5 there but ... I have heard of the issue before but with no solutions I can suggest you either quicksave often (f5) or skip the quests entirely with the console/mod. Not even sure F5 was possible. It was disabled in the menu, as it is with the workshop, so it would seem the only way to save it to exit.
